These are so perfect for the holiday season, but realistically there\u2019s no time of year I wouldn\u2019t demolish entire tray! And yes, I\u2019m speaking from experience \ud83d\ude05 Follow me\u2026<\/p>\n

Smashed Potatoes<\/strong><\/span><\/h2>\n

Smashing potatoes isn\u2019t just therapeutic, it actually makes them ultra crispy. And who doesn\u2019t love a crispy potatoes?!<\/p>\n

What kind of potatoes to use?<\/em><\/h3>\n

I recommend using baby potatoes<\/strong>. Some recipes use slightly larger varieties, but I find the smaller the potato the crispier they end.<\/p>\n

Boiling\/Steaming the potatoes<\/h3>\n

The best way to prepare the potatoes so they\u2019re ready to be smashed is to boil them. Once they\u2019re fork tender, I recommend then letting them steam dry<\/strong>\u00a0for 5 or so minutes. This will help some of the\u00a0moisture escape<\/strong>\u00a0the potatoes and help them\u00a0crisp up<\/strong> in the oven. From there you can coat them in oil and seasoning, then smash until flat!<\/p>\n

How do I smash the potatoes?<\/em><\/h3>\n

You\u2019ll want to gently press down on the potatoes until they\u2019re flat. You\u2019ll want to smash them fairly thin, but not so much that they break apart. I typically use a measuring cup with a flat surface to do this.<\/p>\n

Once they\u2019re smashed, we\u2019re going to bake them in the oven until crisp. From there, it\u2019s time to get topping! If you\u2019ve tried my Cranberry Bacon Brie Grilled Cheese<\/a>, you\u2019ll know how heavenly this combination is.<\/p>\n

You\u2019ll want to top the smashed potatoes with brie and pop back in the oven until it just<\/em> begins to melt. Don\u2019t over-bake at this point otherwise the brie will spill out all over the pan. From there, chuck on the cranberry sauce, bacon and chives!<\/p>\n

If I haven\u2019t got a large-based mug or measuring cup on hand, I typically just use a fork or spatula, but honestly, any sort of flat utensil will do the trick!<\/p>\n

How thin should I smash the potatoes?<\/em><\/h3>\n

The thinner you smash them, the crispier they\u2019ll be. I typically smash as thin as I can get them without them falling apart, but you could keep them a little thicker if you\u2019d prefer.<\/p>\n

Can I use a different cheese?<\/em><\/h3>\n

If you\u2019re looking for something similar to brie you could sub camembert.<\/p>\n

I typically use a plastic flat spatula\/flipper to carefully get them off the tray before serving. They\u2019ll also crisp up a little more as they rest.<\/p>\n
