Juicy chicken breasts wrapped in bacon and stuffed with an irresistible spinach and artichoke filling!<\/span><\/strong><\/span><\/p>\n

I know this sounds and looks like a lot, and it kinda is, but it\u2019s actually really simple to make. Plus it\u2019s outrageously<\/em> delicious. Follow me\u2026<\/p>\n

Spinach Artichoke Chicken<\/strong><\/span><\/h2>\n

Spinach and Artichoke Dip<\/a> is one of my all-time favourite dips. So before I even tried stuffing it inside a chicken breast, I knew we were on to a winner here.<\/p>\n

Spinach Artichoke Filling<\/h3>\n

This is close to the classic dip, but it\u2019s a little thicker<\/strong>. Less of a dip, more of a thick filling. This is so it doesn\u2019t just pour out of the chicken as it bakes.<\/p>\n

I prefer using frozen spinach<\/strong> over fresh \u2013 mainly because it doesn\u2019t need any cooking, but also because I find it\u2019s got a slightly more intense flavour. For the artichokes, I recommend marinated jarred artichoke hearts<\/strong>, just because they\u2019re wrapped in gorgeous flavour. Alongside the spinach and artichokes, we\u2019ve got heaps of cheese<\/strong> and some sour cream<\/strong> to loosen things up, alongside a touch of garlic<\/strong> for extra flavour.<\/p>\n

Stuffed Chicken Breast<\/h3>\n

You essentially want to slice a pocket into the side of the chicken<\/strong>. Slice as deep and wide as you can, without slicing right through the chicken, just to make as much room for the filling as possible. We\u2019re also going to season the chicken with a simple mix of paprika<\/strong>, garlic powder<\/strong>, salt <\/strong>& black pepper<\/strong>.<\/p>\n
